Take the stress out of busy nights with this Chicken Parm Sheetpan Dinner with Gnocchi. Easily add everything to one baking sheet for a balanced meal with minimal cleanup. Breaded chicken strips, skillet gnocchi, veggies, tomato sauce, and parmesan cheese.
Ingredients
Instructions
- Preheat oven to 400F and line a baking sheet with parchment to prevent sticking
- Whisk the egg in a bowl. Slice the chicken into long strips and coat with the egg
- Place breadcrumbs into a zip top bag (or croutons and crush to a fine crumb using the bottom of a glass) and stir in the Italian seasoning. Place the coated chicken strips into the bag and shake to coat with the breadcrumbs. Transfer the chicken to the baking sheet, spread out so that they don’t touch eachother
- Loosely chop the zucchini and red onion and scatter the pieces around the chicken on the baking sheet. Coat everything with a few tablespoons of olive oil. Roast for 20 minutes
- Remove the baking sheet from the oven and add the skillet gnocchi around the chicken and vegetables. Coat everything with 2 cups of tomato sauce and top with parmesan cheese. Return the baking sheet to the oven and roast for 10 more minutes until the cheese is melted and bubbly
