Ingredients you will need
- 2 chicken breasts
- 1/2 red onion
- 4 mushrooms
- 1 small zucchini
- 2 cups cherry tomatoes
- 1 Tbsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp sea salt
- 1/2 tsp paprika
- 1 cup dry orzo pasta (looks and cooks like rice!)
- 1 1/2 cups coconut milk
- 1 1/2 cups chicken broth
- fresh parmesan cheese (optional for garnish)

This one pot family dinner with chicken and creamy orzo is surprisingly dairy-free, made with just a handful of healthy ingredients and 4 spices. Simply add everything to the the pot, bring to a gentle boil, and dinner is ready in 30 minutes.

Instructions
- Heat olive oil in a skillet on medium heat on the stovetop
- Slice chicken breasts into long strips or chunks and add to the warm oil, along with loosely chopped onion, mushrooms, zucchini, and cherry tomatoes
- Add in the spices and stir into the chicken/vegetable mix
- Pour in the dry orzo, coconut milk and chicken broth. Put a lid on the pot and increase the heat to a gentle boil. Cook for 25 minutes, stirring occasionally to prevent the orzo from sticking to the bottom of the pan.
- Remove the lid, add parmesan cheese (optional) and let it stand for 5 minutes before serving in 4 bowls
