  • a Dutch oven or shallow skillet with lid
  • 7 chicken thighs, boneless and skinless
  • 3 Tbsp Italian seasoning
  • 1/2 yellow onion, roughly chopped
  • 1/2 zucchini, cut into 1/2 inch rounds
  • 1-2 garlic cloves, minced
  • juice from 1 lemon, plus more for serving
  • 1 cup uncooked orzo rice
  • 2 cups chicken broth

How to make this chicken and orzo recipe

  1. Season the chicken thighs with Italian seasoning and gently place into a heated skillet or Dutch oven with some olive oil
  2. Sear the chicken thighs for a few minutes, then flip over with tongs. To the pot, add in the rest of the ingredients
  3. Gently stir so that the orzo is wet with the broth, top with a few lemon slices, put a lid on the pot and cook for 25-30 minutes
  4. Remove the lid and test to make sure the orzo and chicken are cooked through. Divide into 4 bowls or plates, garnish with parsley and a lemon wedge
