Why you will love this easy pasta recipe
Like some of my other easy pasta dishes, I try to cook everything in one pot or pan. The sauce for this recipe is just that! I baked everything on one half sheetpan and boiled the pasta in the meantime, giving me plenty of time to do other things
It is balanced with protein from the feta and sausage, healthy fats from the olive oil, and fibre from the vegetables
It is adjustable and customizable. You can swap out the veggies for ones your family might prefer, and you can go for Italian sausage that is either sweet or spicy
Instead of serving the “sauce” with pasta, you can keep it low carb and use spiralized zucchini noodles like I did in this Prawn with Zucchini Noodles recipe. Here is my fave spiralizer that my kids bought me.
It’s not a traditional tomato sauce. Instead, the feta gives a creamy, salty flavour and pairs nicely with the textures of the sausage and baked veggies
It takes just minutes to prep and is ready to serve in 40 minutes (all the work is done in the oven!)


Key ingredients you will need
- 1-2 Italian sausages (removed from casing)
- 2 cups cherry tomatoes
- 1/2 zucchini, roughly chopped
- 1/2 onion, sliced
- 8oz block of feta cheese
- 1/4 cup olive oil
- 2 Tbsp Italian seasoning
- 2 cups uncooked pasta
- squeeze of lemon juice
- up to one cup of pasta water
- red pepper flakes, basil leaves and parmesan cheese for serving
How to make this pasta recipe
- Preheat the oven to 400F and line a baking sheet or half sheet with parchment paper for easy cleanup
- Roughly chop zucchini and onion and put them on the baking sheet along with cherry tomatoes, a block of feta cheese, and uncooked crumbled sausage that you remove from its casing
- Drizzle everything with olive oil and Italian seasoning and bake for 35 minutes
- While the veggies, feta and sausage are baking, boil pasta according to the package instructions
- When straining the pasta, reserve 1 cup of the starchy water for later
- Mix everything together in the same pot that you boiled the pasta in and slowly add in a few tablespoons of the pasta water as you mix. You can use as much or as little as you like the texture of the sauce to be. Add a small squeeze of fresh lemon juice as you mix
- Serve with red pepper flakes, basil leaves and parmesan cheese
