Cheeseburger Quesadillas with Special Sauce

Ingredients you will need

For the quesadillas

1/2 pound of lean ground beef, turkey, or chicken

1 Tbsp olive oil

1/2 tsp garlic powder

1 tsp Italian seasoning

2 flour, whole wheat, almond, or rice tortillas

1 cup grated cheese (mozzarella, cheddar, Jack, or a blend)

For the special sauce

1/2 cup mayonnaise

1/4 cup ketchup

2 tsp mustard

2 tsp relish

1 tsp apple cider vinegar

How to make this recipe

Heat 1 tablespoon of olive oil in a frying pan on medium heat on the stovetop. Brown the ground meat

Stir in the garlic powder and Italian seasoning when the meat is almost cooked

While the meat is cooking, prepare the quesadillas by sprinkling 1/2 cup of cheese onto half of each tortilla shell

Use a slotted spoon or spatula to spoon the cooked meat onto the cheesy tortilla shells and fold the shells in half to make a half moon shape

Use paper towel to wipe out any excess drippings from the frying pan and return the quesadillas to the pan. Put a lid on the pan to help the cheese melt. Cook this side for about 5 minutes, flip to cook the other side. Repeat with the second quesadilla

While the quesadillas are crisping up, stir together the special sauce ingredients in a bowl for serving

Cut the quesadillas into 3 or 4 slices each. This recipe makes 6-8 slices, serving 2 people

Roasted sweet potato fries: Slice into strips (I never peel them), drizzle with olive oil, coarse salt and pepper, and bake at 400F for 30 minutes, flipping at the half way mark
