Gluten-free pancakes with a touch of warming pumpkin spice blend and extra protein, made in one blender.

  1. Heat some butter or coconut oil in a non-stick, non-toxic frying pan on low-medium heat on the stovetop
  2. Add all pancake ingredients to the blender and blend on high for 1 minute, or until all ingredients are blended well. Let the batter sit for 10 minutes to thicken before frying
  3. Pour the batter directly from the blender cup into the warm frying pan, making 6 pancakes. Flip over after a few minutes when they start to brown
