One Pot Lazy Lasagna For Busy Nights (30 minutes)

Ingredients you will need for Lazy Lasagna

  • Lasagna noodles: We used 6 for this recipe, which serves 4 people
  • Ground meat: Choose beef, pork, turkey, lamb, sausage, or a blend of them all
  • Veggies: Onion, carrot, celery, zucchini, mushrooms, spinach, bell pepper all work well
  • Jar of tomato sauce: We like marinara sauce, which is a little sweeter, but any jarred sauce will work
  • Water or broth: To cook the noodles in
  • Cheeses: Ricotta and mozzarella are the perfect blend of cheeses in this recipe
  • Herbs and spices: Fresh basil is always a nice way to finish and flavour a lasagna. We also used Italian seasoning, sea salt, pepper, and fresh garlic

How to make quick lasagna in one pot

  1. Brown the ground meat in a deep skillet with a bit of olive oil, Dutch oven or pot (use one with a lid to match). Dice the onion, mince the garlic, and add them in when the meat is almost cooked through, along with 1 tablespoon of Italian seasoning blend
  2. Add in any other chopped or diced vegetables and cook for a few minutes
  3. While the veggies are cooking, break up 6 lasagna noodles into 2 inch pieces and set aside
  4. Pour a jar of prepared tomato sauce into the meat/veggie mix, along with the broken up lasagna noodles and 1 cup of water or broth. Stir it all together well so that the noodles are covered with sauce
  5. Put a lid on the pot, increase the heat until your sauce comes to a low boil or simmer. This cooks the lasagna noodles for about 12 minutes
  6. When the noodles are not quite finished cooking (al dente), stir in spinach, 4 tablespoons of ricotta cheese, 1 cup of grated mozzarella, sea salt, pepper, and fresh basil. Place the lid back on the pot and cook for a few more minutes until the cheeses melt
  7. Serve while it’s hot!
