How to make this one pot Mediterranean spaghetti

  1. Heat the olive oil on low heat in a deep pan that is big enough to fit the length of dry pasta and has a lid. Add the minced garlic to the heated olive oil and cook for a minute
  2. Add in the cup of cherry tomatoes, sliced olives, dry spaghetti, water or broth. Increase the heat to high, put a lid on the pan and bring it to a boil. Cook for 5-6 minutes, stirring occasionally so that the pasta doesn’t stick together
  3. Once most of the liquid has been absorbed, turn off the heat and stir in the pecorino cheese, lemon zest, and red pepper flakes. Divide into 2 bowls and serve immediately
