The ultimate mom hack is to sneak vegetables in wherever we can, and that is exactly what we did with these baked turkey burgers with hidden veggies.

This Turkey Burger recipe is not only delicious, but versatile, too. You can add any veggies you love, including eggplant, zucchini, even squash. I used what we had on hand and the family approved! The added flavour was like a surprise in every bite, even without egg, breadcrumbs and sugary condiments that traditional burger recipes are made with.

Description

Easy baked burgers made with lean turkey and hidden veggies. Serve them in lettuce for a low carb option. Gluten-free and egg-free.

  1. Preheat oven to 400F
  2. Loosely chop veggies and add them, plus all other ingredients except for the ground turkey to a food processor. Use the chop or puree setting to reduce the veggies to fine pieces
  3. Add the pureed veggies to the ground turkey and mix well. Form into 4 patties and lay flat onto a baking sheet
  4. Bake for 15 minutes, then flip and bake for 15 more minutes
  5. Serve on a lettuce leaf with condiments and veggies of choice

Notes

  • Choose which veggies you are going to include. You only need a few big chunks of various veggies to make an impact on flavour. We used 4 mushrooms, 1/4 onion, and one big carrot for 4 burgers. Loosley chop the veggies and add them to a food processor. If you don’t have one, you can finely chop the vegetabales into tiny pieces. You don’t want them too big or the burgers might not hold together well.

  • Once the veggies are pureed to your liking, add them to the ground turkey. You can add your herbs in here or you can add them to the previous step. I’ve done it both ways and it doesn’t make a difference in the final result. Divide the mixture into 4 equal parts and form 4 burgers. Lay them onto a baking sheet. I usually use parchment paper when I bake, which makes for easy cleanup.

  • Once your burgers are on the baking sheet, you can add more salt and pepper for flavour. Bake for 30 minutes, flipping them half way at 15 minutes. Serve your burgers in a big piece of crispy lettuce, along with sliced avocado, tomato, red onion and any condiments you love.
