When you want that pasta feel and flavour but without the carbs and more fibre, try low carb zucchini boats baked with meat sauce and cheese. This recipe is hearty, made with lean turkey and veggies, scooped into hollowed out zucchini and baked with cheese.

    For the sauce

  1. Heat a deep frying pan or Dutch oven on low heat with olive oil. Add in the ground turkey and fry until it is cooked through and browned
  2. Add in the diced onion and minced garlic, and cook until the onion is translucent. Stir in the Italian seasoning and sea salt
  3. Add in the sliced mushrooms and jar of marinara sauce and reduce the heat to simmer while you prepare the zucchini
  4. For the zucchini boats

  5. Preheat the oven to 375F
  6. Slice the ends of off the zucchini and cut in half lengthwise. Use a teaspoon to scoop out the inner flesh. You can either compost it or add it back into the meat sauce
  7. Spoon the meat sauce into the hollowed out zucchini. Top with parmesan cheese and bake for 30 minutes, or until the cheese is melted and bubbly
