Save time and impress the family with this baked French toast casserole with extra protein from yogurt, and hints of apple and cinnamon in every bite.
Key ingredients you will need to make a French toast casserole
Bread: Use dinner rolls, brioche, baguette, or whichever variety of bread you prefer. If your bread has a tough crust, you will get some nice, crunchy pieces in your casserole
Eggs:Â Whole, organic eggs are always best if you can get them
Yogurt: Use plain, high protein yogurt for the best results
Milk:Â Whole milk or a blend of milk and cream is a decadent option in this recipe
Vanilla extract: Pure vanilla extract is the best
Cinnamon: Powdered cinnamon is perfect
Apple or berries: We used chopped Envy apples in this recipe, but blueberries are also great

How you will make it
Cube 5 cups worth of bread and place it in a casserole dish (we used a 2L dish). Blend in the chopped apple or berries so that the fruit is layered in through the bread
In a separate bowl, whisk eggs with milk, vanilla extract, cinnamon, and yogurt
Pour the egg mixture over the cubed bread and use your hands or a spatula to push down the bread gently so that each piece is coated with egg
Sprinkle with additional cinnamon and bake for 45 minutes, uncovered
Let the casserole cool for 5-10 minutes before serving

Frequently asked questions
What is the best type of bread to use for baked French toast?
Crusty bread like a French baguette, or sourdough, or a French loaf are all great in this recipe. If your bread is 1-2 days old, it’s even better!
Can you make French toast ahead of time?
You can make the egg mixture ahead of time. When you are ready to make the French toast casserole, simply pour the egg mixture over the bread right before you are going to bake it. If you let it soak overnight, it could end up too soggy
Can you reheat this casserole?
Yes! The French toast stays nice and fluffy, even when you reheat it the next day
What other toppings can you add to French toast?
Try adding crushed walnuts, blueberries, mixed berries, or swirl in peanut butter and chia jam for a completely different flavour. You can serve this French toast casserole with pure maple syrup, or enjoy it as it is.
