What you will need to make these healthy baked blueberry oatmeal squares
Quick Oats: Quick oats are the best variety of oats to use in this recipe. They are less processed, high in fibre, and naturally gluten-free
GF Flour: We used a 1:1 gluten-free flour blend that contains xanthan gum for binding. You can grind your own oats or almonds to make a GF flour, but you might need to add xanthan gum to get the right texture
Blueberries: Fresh or frozen
Baking Essentials: Baking soda is all you need for this recipe to give it it’s fluffy texture
Eggs: You will need 3 whole eggs. Organic eggs are always best!
Sweetener: We used honey and pure vanilla extract here in place of refined sugar. See our suggestions below for “variations to try”
Spices: This recipe calls for cinnamon and sea salt, but you can omit the salt if you are using salted butter
Oat Milk: Any unsweetened milk will do! We used oat milk, but almond, cashew, or dairy will all work
Butter: You will want to melt and then cool the butter so that it is still liquid, but not too hot that it will cook the eggs when you mix it in. If you want to substitute butter for coconut oil, that will also work
Other variations to try
Fruit: Fresh or frozen berries, peaches, pineapple, apple, or figs would be amazing in this recipe
Flours: We used a gluten-free 1:1 flour blend in these squares, but you could also make your own oat or almond flour by finely grinding up oats or almonds. You might need to add xantham gum to help the flour bind
Sweetener: To make this vegan or to substitute the honey and vanilla in this recipe, you can try maple syrup or apple sauce
Toppings: Almond butter, Chia Seed Jam, or a dollop of yogurt are delicious toppings for these Blueberry Oatmeal Squares

Instructions
- Preheat oven to 350F and line a 8×8 baking pan with parchment paper to prevent sticking
- In one bowl, stir together the dry ingredients (If you are making your own GF flour, grind 1 cup of oats in a food processor)
- In another bowl, whisk together the eggs with the other wet ingredients
- Pour the wet ingredients into the dry and mix together. Stir in the blueberries
- Transfer the mixture to the prepared baking pan and bake for 35 minutes or until the centre is cooked through
- Let cool completely before slicing into 9 squares
- Store the oatmeal squares in the fridge for up to 5 days or freeze for longer
