  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease lightly with butter or coconut oil
  2. In a large bowl, stir together flour, baking powder, baking soda, salt, and chia seeds
  3. In another bowl, whisk the yogurt, maple syrup, olive oil, eggs, vanilla extract, lemon zest, and lemon juice until smooth
  4. Gently fold the wet mixture into the dry, mixing just until combined (don’t overmix)
  5. Fold in the blueberries just enough to combine. If you mix them in too much, your batter will turn blue (which is fine and kids might love!)
  6. Divide batter evenly into the lined muffin cups (about ¾ full)
  7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean
  8. Cool for 5 minutes in the muffin tins, then transfer to a wire rack to cool further
