These healthy blueberry muffins for kids are naturally sweetened, made with yogurt, lemon and chia seeds for a superfood boost. Perfect snack or breakfast!

- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease lightly with butter or coconut oil
- In a large bowl, stir together flour, baking powder, baking soda, salt, and chia seeds
- In another bowl, whisk the yogurt, maple syrup, olive oil, eggs, vanilla extract, lemon zest, and lemon juice until smooth
- Gently fold the wet mixture into the dry, mixing just until combined (don’t overmix)
- Fold in the blueberries just enough to combine. If you mix them in too much, your batter will turn blue (which is fine and kids might love!)
- Divide batter evenly into the lined muffin cups (about ¾ full)
- Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean
- Cool for 5 minutes in the muffin tins, then transfer to a wire rack to cool further
