Skip the chips for healthier Nachos made with Sweet Potatoes. This quick version packs in antioxidants and protein without the sodium, gluten, or empty carbs. A one-pan, 30-minute meal the family will love.
Sweet potato nachos make a great after school snack, appetizer, or main! Easily make them your own with extra veggies, different proteins and toppings. Here’s what you’ll need and how to make them in just 30 minutes.
Healthy ingredients you will need
Sweet potatoes | Rich in antioxidants for immune system, eye and skin health. Keep the skins on for extra fibre and cut into 1/4 inch rounds
Cooked sausage | I try to cook extra Italian sausage, bacon, ground beef or ground chicken when I’m meal prepping or making other meals. I used cooked sausage for this recipe, but use what you have on hand
Spices | I use this blend of spices for my Chili-stuffed Sweet Potatoes and my No Tomato Turkey Chili recipes. Mix together oregano, chili powder, cumin, sea salt, garlic powder, and cayenne pepper (or omit if too hot)
Cheese | Use a blend of cheeses, like mozzarella, cheddar, Jack
Olive oil | Adds a healthy fat and helps the sweet potatoes get a bit crispy in the oven
Toppings | Choose from avocado, guacamole, sour cream, lime wedges, jalapenos, cilantro, red pepper flakes, salsa, hot sauce
